Cream Cheese Bread Pudding...

Last Sunday I made Cream Cheese Bread Pudding. As our bread is approaching to expiry date, I better do something edible before it end up in the dustbin yet again...



Twinkle is a willing assitant. She is breaking 250gm of cream cheese block with fork since it is still hard.

I add up blackberry jam for variation...



This is the end product after 30minutes in the oven. Notice that the cream cheese cracked. Oh well... it is a pudding.. so perfection is not expected for a pudding... right? Maybe I should bake it at 150'C instead of 160'C and use double-boil method to prevent cracking...


Ah.... My happy aassistant, indulging with the smell and sight...



Suprisingly, I manage to get the bread pudding out from the 8" round pan. My initially response was to scoop it out from the pan. That is normally we do to a bread pudding.





Well, the cheese part of the pudding is gorgeous and delicious by itself. When you put the whole combination of bread and cheese.... it tastes good. However, the bread part tastes plain by itself. Hmm.... If I am going to do it differently, I will spread Nuttella in between of the bread for chocolate taste or fruit jam for another variation. Next time maybe...


Here is the recipe..


Cream Cheese Bread Pudding


10 slices of bread ( I used 7 slices)

2 cups of fresh milk

1/2 cup of brown sugar ( I used caster sugar)

250 gm Cream Cheese

1 egg

1 tsp vanilla essence

raisin for decoration ( I used Blackberry Jam)


Instructions:


1. Arranged sliced bread inside baking pan. In my case, I used 8" round baking pan

2. Pour fresh milk and let it soak for 15 minutes.

3. Next, beat cream cheese and sugar until fluffy. Add egg and vanilla essence. Then mix it together.

4. Pour on top of the bread.

5. Put raisin on top and bake for 30 to 40 minutes at 160'C.

My housing loan is aprroved...




My housing loan is finally approved. The bank officer sms me on 29th September 2011 to sign a few supplement documents. I was so relieved that finally I can own my own house.





Though, I am still waiting for some document from my lawyer since I need it to withdraw my retirement fund for down payment.





Now, I have to adjust my budget. RM1,200.00 per month is such a large amount to pay! My Burberry have to wait then... **sigh**

Cheese Caramel Pudding

I believe this is one of the delicious pudding I ever had. It is very easy to make. I use the recipe from here.




I know, the pudding is not really in the centre... I don't want to nudge the pudding to the center for being at risk of breaking it!





The texture is very soft and smooth.... **drools** If only I have a bad ass camera with zoom property. I only manage to use macro function on my camera to capture all my photos..







Oh.... the caramel... sweet.... For those who are interested to try, here is the recipe:



Caramel Cheese Pudding


For Caramel


70 gm sugar ( or 5 1/2 tbsp )


2 tsp water


2 tbsp warm water


For Pudding


180gm cream cheese ( I use Philadelphia Cream Cheese)


70gm sugar


1 egg yolk


3 eggs


450 ml fresh milk


1 tbsp lemon juice ( I substitute with 1 tsp of lemon essense)




Methods:


1. To prepare caramel, I simply throw all ingredient into the 8" round baking pan and put it on medium heat on the stove. Just don't let the sugar cooked to be too dark or else it will taste bitter.




2. Swirl it around so that the bottom of the pan covered. Leave to cool.




3. In a bowl, mix sugar and cheese together and it is not necessarily fluffy. After that, add eggs one by one. Then add lemon juice (In my case, lemon essence)


4. Next, heat milk to near boil, then add into mixture from step 3. Whisk it quickly to avoid of having scramble egg in the mixture.


5. Pour the mixture into the caramel-covered baking tin. (I strained the mixture so that the texture of the pudding will be smooth).


6. Pe-heat the oven at 160'C for 10 minutes. Then bake the mixture using double boiler method for 45 minutes. Use upper and lower heat.


7. Leave to cool then flip the caramel into the serving plate.


I will definitely bake this pudding again! Good luck.

My Caramel Cake..

HA HA HA..... Please do not be disgusted.... It tastes great!!! I am actually happy with the pattern!!! The caramel .. damn it was good!! The cake was moist... and damn soft!!




It is me to be blamed.... My mistakes were:


i. I did not put at the very bottom of the oven.

ii. I was impatience that I forced the cake to cool down (put in the iced-water) and... the caramel breaks when took the cake out.


I believe... this cake needs... PATIENCE... (sadly which I am lacking) and commitment!!


I will definitely bake this cake again. The step by step instructions from her ( Masam Manis) are very helpful!

To whom it may concern....





She asked me to give it to you. Cute right? Hehehe

Lawyer fees....



I paid partially my lawyer fees. Initially, it was costing me RM10,000.00. But today, I went to the lawyer and further discussed on the fees. Fortunately, there was some reduction on stamping fees since I am first home owner. It came to RM 8,200.00.


I told her honestly that I can pay Rm 5,000.00 today but the remaining of the fees might have to wait. Being considerate to me, she agreed that I will pay the remaining RM 3,200 later.


Before this, I was so naive thinking that I might need house deposit and I will get the house... (Of course I need my house loan to be approved). But, with all legal fees... the cost really add up!


Oh well, I am confident to get through this. As long as I get my own house, everything will be fine.


My monthly payment is basically Rm 1,203.00. With my current salary (on top of my car loan, my ASB laon, insurance, study loan etc.), I still can afford to pay my housing loan. HOWEVER, I definitely need some time to adjust my budget. It just that I am so lucky to be staying in a small town as the expenses here is not that demanding compared to big city.


My advise to all first home buyer, do not be suprised with all the fees.

Twinkle and her new dress....




I bought her a new dress during my previous visit to Sibu. It cost me RM69.00!! Sigh... it is expensive.


As I went through her wardrobe and I found out that 40% of her clothing were:


i. Too small

ii. Too short

iii. Too tight


She is growing up and I have buy some new clothing for her. I hope this blue dress will last her another two years. That will be a real bargain for me...

Scandinavian Apple Cake...




Yesterday me and Twinkle decided to bake an apple cake. It is family's favourite. The cake is moist, not too sweet and easy to bake. The only draw back is that I have to spend more time to cut three apples in cubes! However it is worth an effort.





The recipe is using 225gm of butter, but I simply put the whole block of 250gm. I don't add cinnamon because I don't like the taste of it. I also skipped lemon juice because could not find any at home.

This is my apple cake. I don't put icing sugar on top because it will make the cake too sweet. You can see the apple cubes.. It is so moist and buttery. Yummm... Damn, I forgot to pack it for lunch today. There are still left in the fridge....








I know.... I am drooling too..






Yup.. that's my usual assistant. Tomorrow is her birthday. I am taking leave tomorrow too. Will blog about her birthday...

Yesterday, she went to see the school nurse for her tooth to be pulled out. I guess she will be celebrating birthday with funny smile. She is very brave. When I asked her whether she was crying, she told me, "Only cry a little bit."

Cats, Billy and Twinkle....

I love collecting smiley cats. They are cute and always look happy. In fact, I have three of them in my office. Oh ya, this picture is taken by Twinkle. There goes my camera....

Introducing.... Billy the lizard... He is one of our many pets. We have birds, cats... and chicken? I bought Billy because I like the colour of his eyes. It is gold in colour. Someone told me that if they reach to 500gm in weight, I can get a fortune by selling him... Hmm..



No introduction, Twinkle. She just want to show off her sunny. But it is too small for her now. I think I bought it few years back for her to wear. Sigh... she's getting bigger...

Chocolate Macaroon Cake







Yesterday, me and Twinkle decided to bake a cake. Actually, it was her idea. I found this recipe from the book that I bought in Melbourne long time ago. The recipe is simple just because it does not involves creaming butter and sugar. Simply using oil.








Hmm... it was simple to make. I reduced sugar from 2 cups to 1 1/2 cups. Wise move since it taste just nice. However, I made a mistake by using normal cooking oil! I don't like the after taste of the oil. I should have used sunflower or canola oil. Oh well...




That's my assistant waiting for the cake to cool down before I put the topping.







Finally, she had a bite of it. She likes it since anything sweet is always delicious for any kid. Personally, I will not bake this cake again since I have a better chocolate cake recipe. There is one apple cake recipe from the same book which I really love to bake. I believe I already baked the same cake for more than three times. It tastes so good.... Yumm... Maybe next Sunday project...

Actually, I never thought of buying my own house. I am staying with my parents and life is good. My turning point was after my colleague pointing out that value of money is going to depreciate in the future but not for a house.

I end up hunting for a house and I found an intermediate double storey house. The price is within my budget and now I cannot simply spend my money like before. Everything has its priorities.

So, I have to cancel all this so called future purchases
